Reaper is great for solo play, and is pretty fun in WvW, and unranked PvP (my experience is limited in both, though). Another good starter class is ranger. Good health, very short CD heal, pets, long range with longbow, and very good damage with greatsword.

Easiest classes for beginners are probably standard archetypes such as warrior (only one F1 key), guardian (mostly unused F keys except on firebrand), and ranger (basically the hunter spec with a pet). Raids in Guild Wars 2 are not hard, they don’t need an easy mode. GW2 does have a few hard bosses, but in like From Software games most of the difficulty is your side. Crafting is not a way to make money in this game. It's a way to craft end-game account bound gear and items. You will eventually want all the crafting disciplines unlocked across your account; it doesn't matter which character has which disciplines. Classes suggested for beginners, would probably be Warrior, Guardian, Ranger, and Necromancer. Elementalist or Theif could also be a good choice, but play a little different than usual. Mesmer, Engineer, or Revenant, are probably the most complex classes. Race unfortunately will not affect much more than personal story. Reaper is better and easier to play for a beginner imo. Reaper Shroud gives you a second life bar, and I overall find them to be just a little more tanky and bursty than scourge.
