I found that the easiest way to get all the endings (in the same save) is by following this order: Purification (hardest because you need to beat Owl (Father)). I also recommend you to beat the Demon of Hatred in your first new game [NG]. Return [NG+]. Immortal Severance [NG+1].
For anyone who can't access the start new playthrough option, go back to the dilapidated temple idol. That is where you can access the option to start another playthrough. Grinding for all those skills will take forever in NG or NG+, be sure to go for +3 or +4. you can but it's not recommended because of the acquire all skill achievement need a ton of exp grind for NG+. my method is basically do runs for all endings (NG+3 iinm) and grind for those exp on the last run.
